A Shout Out To The Road Side 'Fries' Sellers.
In New haven and on Abgani Road, there are several 'Fries' spots I like to stop at to buy a mix of fried yam, sweet potatoes and plantain. I have developed a fondness for them because of the perfection to which the 'fries' are fried and taste of the sauce it comes with (although I wish we could get more sauce sha o).
I never gave a lot of thought to the amount of work these women put in, until yesterday.
I had made one very correct corned beef sauce and decided to eat it with boiled sweet potatoes. I am more of a potatoes person and have only recently started to think of sweet potatoes when making my shopping list. I recalled that a friend of mine had once boiled sweet potatoes without peeling them but I couldn't recall why...until I started to peel the sweet potatoes.
I somehow knew I couldn't use a potatoe peeler and so, I just went in with my knife...damn! I immediately understood why she boiled them with the skin on. The damn thing ain't so sweet to peel. I stayed on the task and peeled all 4 pieces I intended to cook.
I thought about the fries seller who didn't even have the option of 'frying' it with the peel on and had to go through the process of peeling several pieces, cutting them up to size, washing and salting them before frying them. And I thought to myself "Mehn, shout out to these strong women o"
